Want some simple and fun recipes for your cooking and home?  I love simplicity, which is why I do my best to keep the ingredients list to a minimum.  While I always advocate for a more plant based diet, the ideal being 70% to 80% raw fruits, vegetables, nuts and seeds.  The recipes found here are wonderful substitutes for their unhealthier version using animal products.  Check out the categories section for a quick search.

Sunny Seed Almond Waffles

These Waffles are so delicious and filling.  You'll want a good  blender for this recipe with at least a 48-oz container.  One batch will make approximately 4 Belgian size waffles, like what you see in the picture (but I make 4 times the amount so I can freeze some for later to pop in the toaster).  My waffle maker is a Cuisinart double waffle iron, and I set the timing at 4 and a half (or half way between the 4 and 5).  You definitely don't want to peek at these waffles as they will pull apart.  Get to know your own waffle maker to know exactly when the perfect time is to take out those delicious waffles!

Tip:  NEVER spray oil on your waffle maker.  These are designed to be non-stick, but once you use oil on them, you'll ALWAYS have to use oil on them.  I learned this the hard way, but once I got my new waffle maker, I made sure no oil was sprayed on it.  I've been using it for years and it's still wonderfully non-stick.  Just gently use a fork to pull the waffle away from the iron (careful not to scratch the non-stick coating with the metal fork).

Ingredients:
1/4 cup Raw Almonds
2 Tbsp Raw Sunflower seeds
1 Tbsp Vanilla
1/2 tsp Salt
4 pitted Dates
2 1/2 cups Water
>Blend until very smooth
then add:
1 1/2 cups Oats (steel cut, rolled, or quick)
2 Tbsp Ground Flax Seed
​>Blend until very smooth
Once you're batter is nice and smooth, let it set for at least 5 minutes, otherwise it tends to be a little too liquidy and the waffle won't hold together as well.
You can pour your batter into a mixing bowl while you make more batches or pour it on your waffle iron right from your blender container.
